Pot Roast Chili

Pot Roast

2-3 pounds boneless beef roast of your choice

2-14.5oz cans beef broth (any brand)

1-1.25oz envelope chili seasoning

Trim fat off roast and discard. Place roast in crockpot, add beef broth until roast is mostly covered. Sprinkle contents of 1 envelope chili seasoning across crock pot contents. Do not mix in. Cover, cook on low for 6 hours. Remove cooked roast from crockpot and discard liquid. Allow roast to cool for 15 minutes. Cut into ½ in cubes. Set aside.

Chili

32oz salsa (any brand)

2-1.25oz envelopes chili seasoning (any brand)

5-15oz cans of beans (rinsed and drained)

Puree salsa in blender or food processor until smooth consistency. Add 2 envelopes chili seasoning and blend until well mixed. Pour salsa mixture into crockpot. Add cubed roast and stir well to break up into smaller pieces. Fold in beans. Cover, cook on low 4-6 hours.
